Selecting and Preparing Fish for Baked Fish Recipes

You need to ensure the fish is properly defrosted to get the very best results from your fish recipe. To defrost fish, leave it on the lower shelves of the refrigerator for between 8 and 12 hours.

Tortillas can also be used instead of bread, to make a kind of sandwich, for casseroles and as a wrap for hot dogs. You can do many things with them and you can even make your own homemade tortillas.

Aztecs made tortillas more than 10,000 years before Christ. Aztecs ate a lot of corn, some right from the cob, and others they would save and use later. They would ground it into corn meal and later make into masa, which is corn dough. The masa is added with water. If the water is not the right temperature, the consistency will not be enough to make the tortilla. Once the masa is ready, it is placed in a ball size in the maker’s hands. It takes awhile to go through the process of making the masa flat. It is patted into what looks like a think pancake. Once it is the right size, it is placed on a hot griddle. It does not take long to cook.

The Secrets of Cooking Fish

There are plenty of different ways of cooking fish and it is fun to try different methods. Depending on whether you are using a whole fish, steaks of fillets, you might like to try braising, deep or shallow frying, steaming or even cooking the fish on a wood fish board. Stuffed fish tastes delicious and adds texture. Round fish are the best for stuffing because the body cavity is larger. Most stuffing is made from breadcrumbs, which expand when they cook, so do not use too much. If you are using sea bass, a parsley and walnut pesto makes a great stuffing. If you have fillets, you can sandwich them with stuffing or roll them, then oven-bake them.

More Ways of Fish Cooking

Poaching and steaming are healthy, easy ways to cook fish. To poach your fish, you add cream or another thickener, herbs and seasoning. You can use the juice to make a sauce for the fish. For steaming, you place the fish in a steamer over boiling water and put a tight-fitting lid over it.

Oven baking and roasting are suitable for whole fish or fillets. You place the fish in an ovenproof dish and add herbs, seasoning, oil or butter and white wine. If you want very tender flesh, you can cook your fish “en papillote”, which means you put the fish in sealed paper or foil, so it will cook in its own steam. You might like to add lemon or limejuice, fresh herbs and white wine to the fish before sealing the parcel and cooking it. If you would like to braise your fish, you need to put it on top of sauted vegetables in an ovenproof dish, add some white wine and bouillon, and cook for about 20 minutes, with a tight-fitting lid in place.

If you are using fillets or small, whole fish, grilling is another cooking method. If your fish are whole, make a few slashes through the skin on each side of the fish and brush it with olive oil or melted mutter. Turn the fish halfway through cooking and baste it if you want. You can also wrap the fish in foil with herbs, lemon juice, and olive oil before placing it on the grill.

You do not have to heat the fish in order to cook it. An example is Ceviche, where white fish (usually snapper) is mixed with limejuice, herbs, and chili. The acidic citrus juice cooks the fish. Scallops, flounder, and sole also suit this cooking method.

Another Fish Cooking Method - Wood Fish Board

This is another great method for cooking fish. You can use just about any kind of wood to cook fish on, as long as it is untreated and pest-free. The wood must be completely waterlogged before cooking, to ensure the wood generates enough steam and smoke to cook the fish, so it needs to be soaked for at least an hour beforehand.

Cedar is the most common wood but you can also use oak, maple, alder, apple, or cherry. You can buy a cooking quality wood fish board from specialty food stores or online. A wood fish board lasts for one use.

When cooking on a wood fish board, the fish cooks indirectly so you do not need to flip it during cooking. You should brush the fish with oil on one side so it does not stick to the board. When the fish is seasoned, place it on the fish board and place the board on the grill. You can baste the fish during cooking with lemon juice or butter if you want, but do not use anything flammable. Make sure the fire is low, so the board does not ignite.

Cooking fish on a wood fish board is an excellent way of cooking. The wood smolders, which creates the smoke to flavor your fish. What’s more, there is no washing up to be done afterwards!

A word about building blog titles though be careful in how you structure your post title. Many of these services have very strict validation criteria. Punctuation such as apostrophes, quotes, and many other non-alpha numeric characters mess with clean validation and these services will end up making adding your blogs RSS feed impossible, My MSN is famous for this while iGoogle and My Yahoo are a little more forgiving.

This can get tricky when you have a title that really screams out for an apostrophe such as “Today’s Breaking News” great for human consumption but the validator will hiccup at the apostrophe in the word “today’s.” You’ll want to avoid these kinds of things even if it is a compelling title I would suggest rewording it to say “Hot News Today” and avoid the whole headache entirely.
